Stuffed Dates with Almond Paste
Ingredients
Filling
- 2 cups sliced almonds
- 1 cup finely ground sugar
- 1 large egg white
- 1/4 teaspoon almond extract

Sugar coating
- 1 egg white
- 1/4 teaspoon almond extract
- 1 teaspoon lemon juice
- 2 cups powdered sugar
For decoration
- Sliced almonds
- Sliced pistachios
Preparation
In a food processor with the steel blade attached, place the almonds, sugar, egg white, and almond extract and blend on medium speed until an almond paste forms.
Using a knife, slit the dates and remove the pit.
Take a walnut-sized amount of almond paste, shape it into a small cylinder, and place it in the center of a date then gently press to adhere and place the stuffed date on a serving plate.
For the sugar coating, in a deep bowl, place the egg white, lemon juice, and almond extract then using a fork stir until well mixed and add the powdered sugar and stir until a smooth, medium-thick sugar sauce forms.
For decoration, dip the stuffed dates in the coating mixture then sprinkle with a little almonds and a little pistachios.
Place the almond paste-stuffed dates on a serving plate and serve.
