Healthy Banana Protein Pancake Stack

Ingredients

  • 2 eggs
  • 1 mashed ripe banana
  • 1 scoop (25g) vanilla protein powder
  • 2 tbsp almond milk
  • 3 tbsp buckwheat flour
  • Olive oil
  • Smooth peanut butter
  • Strawberries

Preparation

  1. Mix together 2 eggs, 1 mashed ripe banana, 1 scoop of vanilla protein powder, 2 tablespoons of almond milk, and 3 tablespoons of buckwheat flour.

  2. Heat olive oil in a pan over medium to high heat.

  3. Cook the pancakes in batches of 2 or 3 depending on the size of the pan.

  4. Finish by topping with smooth peanut butter and some strawberries.
