Fluffy Pink Pancakes with Beet Coloring
Ingredients
- 1 cup oats
- 1 cup almond milk
- 1/2 ripe banana
- 1 tablespoon chia seeds
- 1 tablespoon baking powder
- 1/4 teaspoon vanilla extract
- Beets (steamed chunks, about 4 small, or beet juice or powder)
Preparation
Add all ingredients to a high-speed blender.
Heat a skillet over medium heat and spray with oil.
Pour 1/4 cup of batter onto the skillet and cook each side for 1-2 minutes.
Stack the pancakes on a plate and top with sliced bananas, blackberries, blueberries, and peanut butter.
