Nutritious Vegan Beet Waffles for Breakfast

Ingredients

  • 1 cup oats
  • 1 cup almond milk
  • 1/2 ripe banana
  • 1 tbs chia seeds
  • 1 tsp baking powder
  • splash of vanilla extract
  • 1 tbs beet powder or a chunk of fresh beet

Toppings

  • fresh strawberries
  • blueberries
  • granola
  • drizzle of honey or maple syrup

Preparation

  1. Add all the ingredients into a blender and blend on high for 30 seconds.

  2. Allow the batter to sit for 5-10 minutes to let the baking powder work its magic for fluffiness.

  3. Heat up your waffle iron and pour 1/2 cup batter and close it.

  4. You can also make pancakes with this recipe. It makes about 6-8 pancakes or 2-3 waffles.

Serving suggestions

  1. Top with fresh strawberries, blueberries, granola, and a drizzle of honey or maple syrup.
