Nutritious Vegan Beet Waffles for Breakfast
Ingredients
- 1 cup oats
- 1 cup almond milk
- 1/2 ripe banana
- 1 tbs chia seeds
- 1 tsp baking powder
- splash of vanilla extract
- 1 tbs beet powder or a chunk of fresh beet
Toppings
- fresh strawberries
- blueberries
- granola
- drizzle of honey or maple syrup
Preparation
Add all the ingredients into a blender and blend on high for 30 seconds.
Allow the batter to sit for 5-10 minutes to let the baking powder work its magic for fluffiness.
Heat up your waffle iron and pour 1/2 cup batter and close it.
You can also make pancakes with this recipe. It makes about 6-8 pancakes or 2-3 waffles.
Serving suggestions
Top with fresh strawberries, blueberries, granola, and a drizzle of honey or maple syrup.
