Christmas Tree Pancake Stack
Ingredients
- 80g spelt flour
- 1/2 courgette
- 150ml almond milk
- baking powder
- squeeze of a lemon
- pinch of salt
- 1 scoop vanilla protein powder
- 1 tbsp chia seeds
- handful of spinach
- optional: water or additional almond milk to adjust consistency
Toppings
- apple and cinnamon sugar free syrup
- strawberries
- sprinkle of oat flour
Preparation
Mix all batter ingredients together to form a smooth consistency
Heat a non-stick pan or griddle over medium heat and lightly grease it
Pour batter onto the pan to make individual pancakes, cooking until bubbles form and edges set, then flip and cook until golden brown
Stack the cooked pancakes in a triangular shape to resemble a Christmas tree
Top the stack with apple and cinnamon syrup, fresh strawberries, and a sprinkle of oat flour
