Gooey Chocolate Brownie with Zucchini and Black Beans

Ingredients

  • 1/2 zucchini
  • 100g uncooked tinned black beans (washed, in water)
  • 40g spelt flour
  • 20g chocolate soy isolate
  • 1 tbsp chia seeds
  • 1 tbsp cacao powder
  • 150ml almond milk
  • baking powder
  • salt
  • squeeze of a lemon

Preparation

  1. Blend all ingredients in a blender.

  2. Place the mixture in an oven-proof pan or bowl.

  3. Bake in the oven at 180°C for 25-30 minutes.

  4. Allow to cool slightly.

  5. Top with chocolate Easter treats like dark chocolate bunnies, cacao nibs, and blueberries.

  6. Note: Remove earlier for a gooier texture or cook longer for a firmer brownie.
