Gooey Chocolate Brownie with Zucchini and Black Beans
Ingredients
- 1/2 zucchini
- 100g uncooked tinned black beans (washed, in water)
- 40g spelt flour
- 20g chocolate soy isolate
- 1 tbsp chia seeds
- 1 tbsp cacao powder
- 150ml almond milk
- baking powder
- salt
- squeeze of a lemon
Preparation
Blend all ingredients in a blender.
Place the mixture in an oven-proof pan or bowl.
Bake in the oven at 180°C for 25-30 minutes.
Allow to cool slightly.
Top with chocolate Easter treats like dark chocolate bunnies, cacao nibs, and blueberries.
Note: Remove earlier for a gooier texture or cook longer for a firmer brownie.
