Easy Chocolate Crepes with Chia Seed Batter

Ingredients

  • 80g spelt flour
  • 5g chia seeds
  • 250ml almond milk
  • 1/2 tsp baking powder

Optional add-ins

  • 5g cacao powder
  • 5g coconut sugar

Preparation

  1. Blitz all the ingredients in a blender to grind the chia seeds and create a batter.

  2. Heat a good non-stick pan; if the pan isn't very non-stick, use a little oil as advised.

  3. Pour the batter onto the heated pan.

  4. Cook the crepe, then flip it, toss if desired, add toppings, and serve immediately.

  5. For optional chocolate flavor, include cacao powder and coconut sugar in the batter mixture.

  6. Prepare toppings by mixing 150g soy yogurt with 20g chocolate protein powder, and add cacao nibs and chocolate sugar-free syrup as desired.
