Chocolate Courgette Protein Pancakes

Ingredients

  • 70g spelt flour or alternative (not nut or coconut flour)
  • 1 scoop MyProtein vanilla soy isolate protein
  • 1/2 courgette
  • 1 tablespoon MyProtein chia seeds
  • 1 tablespoon cacao powder
  • baking powder
  • squeeze of a lemon
  • 150-180ml almond milk

Preparation

  1. Grate the courgette

  2. Mix the dry ingredients together: spelt flour, protein powder, chia seeds, cacao powder, and baking powder

  3. In a separate bowl, combine the grated courgette, almond milk, and lemon juice

  4. Add the wet mixture to the dry mixture and stir until a batter forms

  5. Heat a non-stick pan over medium heat, pour batter to form pancakes, and cook until bubbles appear and edges set, then flip and cook until golden brown
