Chocolate Courgette Protein Pancakes
Ingredients
- 70g spelt flour or alternative (not nut or coconut flour)
- 1 scoop MyProtein vanilla soy isolate protein
- 1/2 courgette
- 1 tablespoon MyProtein chia seeds
- 1 tablespoon cacao powder
- baking powder
- squeeze of a lemon
- 150-180ml almond milk
Preparation
Grate the courgette
Mix the dry ingredients together: spelt flour, protein powder, chia seeds, cacao powder, and baking powder
In a separate bowl, combine the grated courgette, almond milk, and lemon juice
Add the wet mixture to the dry mixture and stir until a batter forms
Heat a non-stick pan over medium heat, pour batter to form pancakes, and cook until bubbles appear and edges set, then flip and cook until golden brown
