Vegan Mudcake Pancakes with Chocolate Ganache

Ingredients

  • 1/2 cup oat flour
  • 2.5 tbs cacao powder
  • 1 tbs coconut sugar
  • 1 tbs flaxmeal/ground chiaseeds
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp vanilla
  • 1/4 cup unsweetened applesauce
  • 1/3 cup almond milk

Preparation

  1. Mix all ingredients until just combined and let rest for 5-10 minutes, heating your pan.

  2. Grease well and fry till edges are opaque and dull, flipping and cooking for another 2 minutes.
