Easy Vegan Matcha Chocolate Chip Pancakes
Ingredients
- 1 cup almond milk
- 1 ripe banana
- 1 tsp vanilla
- 1 cup plain all purpose wholewheat flour
- 3 tsp baking powder
- 1.5 tbsp coconut sugar
- 1/4 tsp cinnamon
- 1 tbsp matcha
- pinch of salt
Preparation
In a blender, add 1 cup almond milk, 1 ripe banana, and 1 tsp vanilla, then blend.
Add 1 cup plain all purpose wholewheat flour, 3 tsp baking powder, 1.5 tbsp coconut sugar, 1/4 tsp cinnamon, 1 tbsp matcha, and a pinch of salt. Blend on low until just combined.
Cook on a frypan on medium heat for approximately 3 minutes on one side and 1-2 minutes on the other.
Serve with your favorite toppings, such as fresh berries, coconut yogurt, maple syrup, and a dollop of matcha mint choc chip ice-cream with extra chocolate on top.
Notes
Feel free to omit the coconut sugar, just make sure to use a super ripe banana.
If you’re new to matcha, start with 2-3 tsp instead so the flavor isn’t too strong for you. Enjoy!
