Delicious Vegan Pasta Salad

Ingredients

  • 1 package of pasta (I used @barillaus chickpea rotini)
  • 1 head of broccoli
  • 2 large carrots
  • 1 red bell pepper
  • 1 yellow squash
  • 3 heads of green onion
  • Olives
  • 1/2 cup vegan ranch (I used @daiyafoods vegan ranch)

Preparation

  1. Cook pasta according to package instructions, then rinse in cool water and set aside.

  2. Cut up your veggies and add them to a large bowl.

  3. Add your pasta, then your vegan ranch- you can add extra ranch for even more flavor.

  4. That’s literally it, enjoy!
