Chickpeas Cookie Dough Bars

Ingredients

  • 1/2 zucchini, chopped thinly
  • 1 red bell pepper
  • 1 red onion
  • 2 garlic cloves, minced
  • Chickpeas
  • Vegan chicken pieces (tofu works just as well!)
  • Sundried tomatoes
  • Olives
  • Vegan cooking cream (I use oatlys oat cooking cream)
  • Bbq sauce - or other sauce or seasoning
  • Oil
  • Salt & pepper

Preparation

  1. Fry all the veggies, chickpeas and ch*cken together in some oil until crispy/fried. Boil the pasta

  2. Preheat oven to 190C

  3. Add the cooking cream, sundried tomatoes, olives, salt, pepper, bbq sauce and allow to simmer for 10 minutes. Add the pasta to the sauce and mix

  4. Pour the pasta mix into a greased baking form and bake in the oven for 25-30 minutes, covering with foil to avoid burning

  5. Eat warm... or cold and top with more olives and sundried tomatoes
