Creamy Kale Garlic Pasta with Vegan Chicken
Ingredients
- minced garlic
- diced onion
- tofu or vegan chicken pieces
- oat cream (around 600ml)
- salt
- black pepper
- soy sauce
- vegan parmesan
- kale
- pasta (large form)
Optional additions
- extra garlic
- sundried tomatoes
- tahini
- white beans
Preparation
Fry minced garlic and diced onion in oil
Add tofu or vegan chicken pieces and fry until crispy, or cook this separately
Add oat cream, salt, black pepper, soy sauce, and vegan parmesan
Add kale and let it simmer
Boil pasta until soft
Add some of the pasta water to the sauce and discard the rest
Add the cooked pasta to the sauce, mix well, and combine
Serve and enjoy
Tips
Use a large pasta form to ensure the sauce mixes well with the pasta
Incorporate some pasta water into the sauce for added starch and salt
Include vegan parmesan for enhanced flavor
If using frozen kale, reduce the amount of oat cream since kale releases water during cooking
