Easy Vegan Zucchini Bolognese Pasta

Ingredients

  • 250 grams pasta of your choice
  • 1 tablespoon cooking oil
  • 1 onion
  • 1 carrot
  • 1 clove garlic
  • 1 medium zucchini
  • 200 grams tofu or plant-based minced meat
  • 3 tablespoons tomato paste
  • water, as needed (about 200 milliliters)
  • optional: 100 milliliters vegan cooking cream

Preparation

  1. Cook 250 grams of pasta according to package instructions.

  2. Cut the onion and carrot into small pieces and fry them in oil over high heat for about 2 minutes.

  3. Add the zucchini and fry for a few minutes.

  4. Add the tofu or plant-based minced meat, tomato paste, and about 200 milliliters of water, adjusting for desired creaminess.

  5. Optionally, add vegan cooking cream and finely chopped garlic.

  6. Let everything cook for 3 to 5 minutes.

  7. Season with salt and pepper, and serve with the cooked pasta.
