Quick Lentil Pasta Sauce
Ingredients
- 1 chopped onion
- 1 chopped pepper
- 2 chopped or grated garlic cloves
- 1 tin lentils, drained and rinsed
- 1/2 teaspoon chili powder
- 1/2 teaspoon paprika
- 1 heaped teaspoon oregano
- 1 stock cube
- A generous sprinkle of black pepper
- 300-400g tomato passata
- Splash of plant milk
Preparation
Fry the onion and pepper in a frying pan for five to seven minutes.
Add the garlic and fry for another minute.
Add the lentils and spices and fry for a couple of minutes.
Add the tomato passata and plant milk to the pan and mix in. Leave to simmer for 5 to 10 minutes.
Cook pasta according to package instructions and serve with the sauce.
Tips
Double the chili powder if using a mild version or if you prefer more spice.
