Summer Pasta with Grilled Shrimp
Ingredients
- 2 cups grape tomatoes
- 1 (5.3 oz) Boursin cheese
- 3 garlic cloves
- 1 lemon
- 1/4 cup Pompeian olive oil
- 1 tablespoon Italian seasoning
- 4 cups cooked pasta
- Basil, for garnish
Shrimp marinade
- 1 lb shrimp
- Olive oil
- 1 lemon
- 2 garlic cloves
- Salt and pepper
Preparation
Preheat oven to 375 degrees.
In an 8x11 baking dish, add tomatoes, Boursin cheese, garlic, lemon zest and juice, olive oil, and Italian seasoning.
Bake in the oven for 35 minutes.
Meanwhile, boil and drain the pasta and prepare the shrimp.
Heat grill to 450 degrees.
Skewer the shrimp, drizzle with olive oil, add lemon zest, lemon juice, and grated garlic, then season with salt and pepper.
Grill the shrimp for 3-4 minutes per side.
Crush the tomatoes and combine with the baked cheese, then add the pasta to the dish and mix.
Serve the pasta with the shrimp.
