Pesto Pasta with Chicken

Ingredients

  • 4 chicken breast fillets
  • 1/2 package pasta
  • 3 bunches basil
  • 1/2 cup pine nuts
  • 1 cup olive oil
  • 1/2 cup parmesan cheese
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

Preparation

  1. In a wide pot, heat about 4 cups of water, add 1 tablespoon salt and 1 tablespoon oil, bring to a boil on high heat, add the pasta, stir, cook for 8 minutes, then drain.

  2. In a blender jug, place the basil and pine nuts, add about 2 tablespoons of parmesan cheese, blend until smooth, gradually add the oil in a stream while blending until you get a thick sauce.

  3. In a wide skillet, heat 3 tablespoons of oil, add the chicken, salt, and pepper, stir on medium heat for 10 minutes until cooked.

  4. Add the sauce to the chicken, stir and leave for 2 minutes, drain the pasta and add it to the chicken mixture.

  5. Place the pasta in a serving dish, sprinkle with cheese and some pine nuts.
