Pesto Pasta with Chicken
Ingredients
- 4 chicken breast fillets
- 1/2 package pasta
- 3 bunches basil
- 1/2 cup pine nuts
- 1 cup olive oil
- 1/2 cup parmesan cheese
- 1 teaspoon salt
- 1/4 teaspoon black pepper
Preparation
In a wide pot, heat about 4 cups of water, add 1 tablespoon salt and 1 tablespoon oil, bring to a boil on high heat, add the pasta, stir, cook for 8 minutes, then drain.
In a blender jug, place the basil and pine nuts, add about 2 tablespoons of parmesan cheese, blend until smooth, gradually add the oil in a stream while blending until you get a thick sauce.
In a wide skillet, heat 3 tablespoons of oil, add the chicken, salt, and pepper, stir on medium heat for 10 minutes until cooked.
Add the sauce to the chicken, stir and leave for 2 minutes, drain the pasta and add it to the chicken mixture.
Place the pasta in a serving dish, sprinkle with cheese and some pine nuts.
