Macaroni with Almond and Basil Sauce
Ingredients
- 1 1/2 cups roasted peeled almonds
- 1 clove crushed garlic
- 8 chopped basil leaves
- 4 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 cup finely grated Parmesan cheese
- 2 large peeled and finely chopped tomatoes
- 10 quartered cherry tomatoes
- 1 cup shell pasta
Preparation
In a mortar, place the almonds, garlic, basil, oil, and salt. Grind until smooth and homogeneous. Transfer to a deep dish. Add half the cheese.
In a deep dish, place the tomatoes. Mash with a vegetable masher until very smooth. Add to the almond-basil mixture. Add the cherry tomatoes.
In a deep pot, place plenty of water. Add a tablespoon of salt and a tablespoon of corn oil. Heat on medium until boiling vigorously.
Add the pasta and cook for 10 minutes. Drain and add directly to the almond-tomato mixture. Stir well.
Pour into a serving dish. Sprinkle the remaining cheese and serve immediately.
