Vegan Taco Pasta

Ingredients

  • 250g cooked pasta of your choice
  • 200g canned kidney beans, drained
  • 150g canned corn, drained
  • 1 onion finely chopped
  • 100ml tomato puree
  • 50ml vegetable stock
  • 1 vegan burger patty
  • 1 1/2 tsp smoked paprika powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt
  • Oil for frying

Preparation

  1. Fry the onion in oil until translucent.

  2. Crumble the vegan burger patty and fry it with the onion.

  3. Deglaze with the vegetable stock, add the remaining ingredients except the pasta and simmer briefly.

  4. Stir in the pasta and serve.

Tips

  1. Use smoked paprika powder, not normal paprika powder, for the best flavor.
