Matcha Green Tea Coconut Slice

Ingredients

Slice

  • 1 cup self raising flour
  • pinch of salt
  • 3/4 cup caster sugar
  • 1 cup desiccated coconut
  • 125g butter (melted)
  • 2 eggs (lightly beaten)
  • 1/2 cup milk
  • 1 tspn vanilla extract or essence

Matcha icing

  • 1 1/3 cups icing sugar (sifted)
  • 20g butter (softened)
  • 1 tbsp boiling water
  • 1 tsp matcha green tea powder
  • 2 tbsp desiccated coconut

Preparation

  1. Pre-heat oven to 180˚C fan forced

  2. Grease and line a rectangular pan

  3. Combine flour, salt, sugar, coconut and butter in a bowl. Combine well, then add eggs, milk and vanilla

  4. Spread into prepared pan. Bake for 20-25 minutes or until golden and top is firm to touch. Let it cool.

  5. Place icing sugar into a bowl, then add butter and stir to combine. Stir in boiling water and mix. Add matcha powder to the icing well so it's combined evenly. Then finally, spread icing over slice and sprinkle with coconut.
