Divine Spring Inspired Coconut Slice

Ingredients

Slice

  • 1 cup self raising flour
  • pinch of salt
  • 3/4 cup caster sugar
  • 1 cup desiccated coconut
  • 125g butter (melted)
  • 2 eggs (lightly beaten)
  • 1/2 cup milk
  • 1 tsp vanilla extract or essence

Icing

  • 1 1/3 cups icing sugar (sifted)
  • 20g butter (softened)
  • 1 tbsp boiling water
  • 1 tbsp antioxidant blend powder (optional)
  • 2 tbsp desiccated coconut

Preparation

  1. Pre-heat oven to 180˚C fan forced

  2. Grease and line a rectangular pan

  3. Combine flour, salt, sugar, coconut and butter in a bowl. Combine well, then add eggs, milk and vanilla

  4. Spread into prepared pan. Bake for 20-25 minutes or until golden and top is firm to touch. Let it cool.

  5. Place icing sugar into a bowl, then add butter and stir to combine. Stir in boiling water and mix. Add antioxidant blend powder to the icing, mix well so it's combined evenly. Then finally, spread icing over slice and sprinkle with coconut. Then dig in, it's so addictive!
