Blueberry Coffee Cake
Ingredients
- Streusel
- 1/3 cup sugar
- 1/2 cup all purpose flour
- 1 tsp cinnamon
- 1/8 tsp salt
- 1/4 cup butter
- Cake
- 2 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
- 3/4 cup sugar
- 1/4 cup butter
- 1 egg
- 1 tsp vanilla
- 1/2 cup milk
- 2 cups blueberries (fresh or frozen I used fresh)
Preparation
For streusel topping: mix all ingredients & then cut butter into mixture until it reaches crumbly state
For cake: blend flour, BP, salt
In desperate bowl beat sugar, eggs, butter & vanilla
Alternatively add milk & flour mixture to egg mixture ending with flour
Add in blueberries
Pour batter in 9’ square pan
Sprinkle streusel topping
Bake for 40 to 45 minutes at 375
