Blueberry Coffee Cake

Ingredients

  • Streusel
  • 1/3 cup sugar
  • 1/2 cup all purpose flour
  • 1 tsp cinnamon
  • 1/8 tsp salt
  • 1/4 cup butter
  • Cake
  • 2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup sugar
  • 1/4 cup butter
  • 1 egg
  • 1 tsp vanilla
  • 1/2 cup milk
  • 2 cups blueberries (fresh or frozen I used fresh)

Preparation

  1. For streusel topping: mix all ingredients & then cut butter into mixture until it reaches crumbly state

  2. For cake: blend flour, BP, salt

  3. In desperate bowl beat sugar, eggs, butter & vanilla

  4. Alternatively add milk & flour mixture to egg mixture ending with flour

  5. Add in blueberries

  6. Pour batter in 9’ square pan

  7. Sprinkle streusel topping

  8. Bake for 40 to 45 minutes at 375
