Carrot Cake Mug Cake
Ingredients
- 1 egg (sub flax egg if vegan: 1 tbsp flax meal + 2 1/2 tbsp water, chilled for 5 min)
- • 1 cup rolled oats
- • 1/4 cup shredded carrots
- • 1/4 cup pure maple syrup
- • 1 cup almond milk
- • 1/2 tsp baking powder
- • 1/4 tsp cinnamon
- • dash of nutmeg
- • dash of ginger
- • handful crushed walnuts
Preparation
Preheat oven to 375F
Pour mixture into oven safe dishes and bake for 35-40 minutes
Remove from oven and top with vanilla gelato, crushed pecans, more carrot shreds and a drizzle of pure maple syrup - enjoy! | #almo
