Carrot Cake Mug Cake

Ingredients

  • 1 egg (sub flax egg if vegan: 1 tbsp flax meal + 2 1/2 tbsp water, chilled for 5 min)
  • • 1 cup rolled oats
  • • 1/4 cup shredded carrots
  • • 1/4 cup pure maple syrup
  • • 1 cup almond milk
  • • 1/2 tsp baking powder
  • • 1/4 tsp cinnamon
  • • dash of nutmeg
  • • dash of ginger
  • • handful crushed walnuts

Preparation

  1. Preheat oven to 375F

  2. Pour mixture into oven safe dishes and bake for 35-40 minutes

  3. Remove from oven and top with vanilla gelato, crushed pecans, more carrot shreds and a drizzle of pure maple syrup - enjoy! | #almo
