Simple Vegan Carrot Cake
Ingredients
Cake
- 1 cup + 2 tbsp spelt flour
- 1/2 cup quick oats
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- dash of salt
- 2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ginger
- 1 large banana
- 1/4 cup raw honey (or maple syrup or agave)
- 1/4 cup + 2 tbsp almond milk
- 1 tbsp ground flax seed
- 15 baby carrots
Icing
- 1/2 cup soaked cashews
- 2 tbsp vegan cream cheese
- 1/2 cup water
- 1/2 tsp vanilla extract
- 1 tbsp honey (or maple syrup or agave)
- 1/2 tsp lemon juice
Preparation
Preheat oven to 350 degrees Fahrenheit.
Mash the banana, and mix in the honey, almond milk, flax seeds, and grated carrot.
Next, add in the dry ingredients: the spelt flour, oats, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
Add batter to a greased pan and bake for 15-20 minutes.
Meanwhile, make the frosting by blending together all of the ingredients until smooth and creamy.
Let the cake cool completely before adding the frosting on top.
Cut into squares and enjoy.
