Healthy Carrot Cake with Vanilla Yoghurt Frosting

Ingredients

Cake

  • carrots
  • banana
  • dates
  • sultanas
  • lemon juice
  • ginger
  • cinnamon
  • walnuts
  • gluten free flour
  • baking powder

Frosting

  • dairy free vanilla yoghurt
  • cinnamon
  • ginger

Preparation

  1. Preheat the oven to 180°C

  2. Grease and line a cake pan

  3. Grate the carrots and mash the banana

  4. In a bowl, mix dry ingredients: gluten free flour, baking powder, ginger, and cinnamon

  5. In another bowl, combine wet ingredients: grated carrots, mashed banana, dates, sultanas, and lemon juice

  6. Combine the wet and dry mixtures, then fold in the walnuts

  7. Pour the batter into the prepared pan and bake for 30-40 minutes or until a toothpick inserted comes out clean

  8. Allow the cake to cool completely

  9. For the frosting, mix dairy free vanilla yoghurt with cinnamon and ginger until smooth

  10. Spread the frosting evenly over the cooled cake
