Healthy Carrot Cake Baked Oatmeal

Ingredients

  • 3 carrots
  • 2 cups rolled oats
  • 2/3 cup coconut sugar
  • 2 tbsp chia seeds or flax meal
  • 1 tsp cinnamon
  • 1/4 tsp pumpkin pie spice
  • 1 1/4 cups water
  • 1 cup soymilk
  • 1/2 cup raisins
  • 1/3 cup chopped walnuts or shredded coconut (optional)

Preparation

  1. Finely chop 3 carrots using a food processor and transfer to a large mixing bowl.

  2. Add 2 cups rolled oats, 2/3 cup coconut sugar, 2 tbsp chia seeds or flax meal, 1 tsp cinnamon, 1/4 tsp pumpkin pie spice, 1 1/4 cups water, 1 cup soymilk, 1/2 cup raisins, and 1/3 cup chopped walnuts or shredded coconut (optional) to the bowl.

  3. Mix everything together until well combined.

  4. Pour the mixture into a baking dish.

  5. Bake at 375°F for 45 minutes.
