Carrot Cake Inspired Oatmeal Breakfast

Ingredients

  • 1 large carrot
  • 1/2 cup rolled oats
  • 1/2 cup almond milk
  • water to cover
  • 1 tbsp ground flax
  • 1 tbsp chia seeds
  • 1 tbsp cinnamon
  • pinch of nutmeg
  • maple syrup
  • crushed walnuts

Preparation

  1. Grate 1 large carrot into a bowl.

  2. Add 1/2 cup rolled oats, 1/2 cup almond milk, and water to cover.

  3. Microwave the mixture for 2 minutes.

  4. Stir in 1 tbsp ground flax, 1 tbsp chia seeds, 1 tbsp cinnamon, and a pinch of nutmeg.

  5. Top with a drizzle of maple syrup and crushed walnuts.

Notes

  1. Carrots may not cook fully in the microwave, providing a crunchy texture that complements the creamy oats and adds a naturally sweet flavor with the spices, mild walnuts, and sweet syrup.
