Carrot Cake Inspired Oatmeal Breakfast
Ingredients
- 1 large carrot
- 1/2 cup rolled oats
- 1/2 cup almond milk
- water to cover
- 1 tbsp ground flax
- 1 tbsp chia seeds
- 1 tbsp cinnamon
- pinch of nutmeg
- maple syrup
- crushed walnuts
Preparation
Grate 1 large carrot into a bowl.
Add 1/2 cup rolled oats, 1/2 cup almond milk, and water to cover.
Microwave the mixture for 2 minutes.
Stir in 1 tbsp ground flax, 1 tbsp chia seeds, 1 tbsp cinnamon, and a pinch of nutmeg.
Top with a drizzle of maple syrup and crushed walnuts.
Notes
Carrots may not cook fully in the microwave, providing a crunchy texture that complements the creamy oats and adds a naturally sweet flavor with the spices, mild walnuts, and sweet syrup.
