Overnight Carrot Cake Oats Breakfast
Ingredients
- 1/3 cup rolled oats
- 1/3 cup soy or oat milk
- 1/3 cup water
- 1 tbsp ground flaxseed
- 3/4 of a finely grated carrot
- 1 tsp cinnamon
- pinch ground ginger
- pinch nutmeg
- pinch fine sea salt
- a little vanilla extract (optional)
- 1 tsp maple syrup (optional)
Preparation
Mix all the ingredients together and place in a jar or bowl to soak overnight.
Alternatively, add all the ingredients to a saucepan and cook over medium-high heat until creamy.
Enjoy, and optionally top with banana, blueberries, peanut butter, pumpkin seeds, and cinnamon.
