Overnight Carrot Cake Oats Breakfast

Ingredients

  • 1/3 cup rolled oats
  • 1/3 cup soy or oat milk
  • 1/3 cup water
  • 1 tbsp ground flaxseed
  • 3/4 of a finely grated carrot
  • 1 tsp cinnamon
  • pinch ground ginger
  • pinch nutmeg
  • pinch fine sea salt
  • a little vanilla extract (optional)
  • 1 tsp maple syrup (optional)

Preparation

  1. Mix all the ingredients together and place in a jar or bowl to soak overnight.

  2. Alternatively, add all the ingredients to a saucepan and cook over medium-high heat until creamy.

  3. Enjoy, and optionally top with banana, blueberries, peanut butter, pumpkin seeds, and cinnamon.
