Healthy Carrot Cake Porridge Breakfast
Ingredients
- 1/2 cup gluten free rolled oats (45 grams)
- 1 medium carrot, grated (1/2-3/4 cup)
- 2 tsp ground flaxseed
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1-2 tsp maple syrup (optional)
- 1 tsp vanilla extract
- 1/2 cup almond milk (or milk of choice)
- 1/2 cup water
Preparation
Grate the carrot.
Add the grated carrot, oats, flaxseed, maple syrup (if using), cinnamon, and nutmeg to a small saucepan.
Pour in the water, almond milk, and vanilla extract.
Gently mix everything together.
Bring to a boil, then reduce to low heat and stir for 7-10 minutes or until it reaches your preferred consistency.
Transfer to a bowl and top with nuts, banana or apple, dried fruit, and coconut yogurt.
