Carrot Cake Baked Oatmeal for Easter Breakfast
Ingredients
- 3 carrots
- 2 cups rolled oats
- 2/3 cup coconut sugar
- 2 tbsp chia seeds or flax meal
- 1 tsp cinnamon
- 1/4 tsp pumpkin pie spice
- 1.25 cups water
- 1 cup soymilk
- 1/2 cup raisins
- 1/3 cup chopped walnuts or shredded coconut (optional)
Preparation
Food process 3 carrots in your blender until finely chopped and transfer to a large mixing bowl.
Add 2 cups rolled oats, 2/3 cup coconut sugar, 2 tbsp chia seeds or flax meal, 1 tsp cinnamon, 1/4 tsp pumpkin pie spice, 1.25 cups water, 1 cup soymilk, 1/2 cup raisins, and 1/3 cup chopped walnuts or shredded coconut (optional) to the bowl.
Mix everything together until well combined.
Pour the mixture into a baking dish.
Bake at 375°F for 45 minutes.
