Dairy-Free Carrot Cake Donuts

Ingredients

  • 1 cup flour
  • 1 tsp baking soda
  • 1 tsp nutmeg and cinnamon
  • 1/2 tsp ginger
  • 1 egg
  • 1/3 cup oil
  • 1/4 cup maple syrup
  • 1/4 cup almond milk (add more if needed)
  • 1 cup shredded carrots
  • 2 tbsp chopped walnuts
  • sprinkle of salt

Preparation

  1. Combine 1 cup flour, 1 tsp baking soda, 1 tsp nutmeg and cinnamon, and 1/2 tsp ginger in a bowl.

  2. In another bowl, combine 1 egg, 1/3 cup oil, 1/4 cup maple syrup, and 1/4 cup almond milk; add more almond milk if needed.

  3. Combine the dry and wet mixtures together.

  4. Fold in 1 cup shredded carrots, 2 tbsp chopped walnuts, and a sprinkle of salt.

  5. Spoon the batter into a greased donut pan.

  6. Bake at 350 degrees Fahrenheit for 13 minutes.

  7. Let the donuts cool.

  8. Top with So Delicious dairy-free whip cream.
