Dairy-Free Carrot Cake Donuts
Ingredients
- 1 cup flour
- 1 tsp baking soda
- 1 tsp nutmeg and cinnamon
- 1/2 tsp ginger
- 1 egg
- 1/3 cup oil
- 1/4 cup maple syrup
- 1/4 cup almond milk (add more if needed)
- 1 cup shredded carrots
- 2 tbsp chopped walnuts
- sprinkle of salt

Preparation
Combine 1 cup flour, 1 tsp baking soda, 1 tsp nutmeg and cinnamon, and 1/2 tsp ginger in a bowl.
In another bowl, combine 1 egg, 1/3 cup oil, 1/4 cup maple syrup, and 1/4 cup almond milk; add more almond milk if needed.
Combine the dry and wet mixtures together.
Fold in 1 cup shredded carrots, 2 tbsp chopped walnuts, and a sprinkle of salt.
Spoon the batter into a greased donut pan.
Bake at 350 degrees Fahrenheit for 13 minutes.
Let the donuts cool.
