Healthy Fruit and Veggie Breakfast Muffins
Ingredients
- 1 mashed banana
- 1/4 cup honey
- 2 eggs
- 1 tsp vanilla
- 1/4 cup melted vegan butter
- 1/4 cup almond milk
- 1 shredded apple
- 2 shredded carrots
- 1 1/4 cup flour
- 1 tsp baking soda
- sea salt
- 1/2 cup unsweetened shredded coconut
- 1/2 cup chopped walnuts (optional)
Preparation
Preheat oven to 350°F.
In a large bowl, combine the mashed banana, honey, eggs, vanilla, melted vegan butter, almond milk, shredded apple, and shredded carrots.
Stir in the flour, baking soda, and a sprinkle of sea salt.
Fold in the shredded coconut and chopped walnuts if using.
Bake for 25 minutes.
Tip: Use a food processor to shred the apple and carrots for easier preparation.
