Healthy Fruit and Veggie Breakfast Muffins

Ingredients

  • 1 mashed banana
  • 1/4 cup honey
  • 2 eggs
  • 1 tsp vanilla
  • 1/4 cup melted vegan butter
  • 1/4 cup almond milk
  • 1 shredded apple
  • 2 shredded carrots
  • 1 1/4 cup flour
  • 1 tsp baking soda
  • sea salt
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup chopped walnuts (optional)

Preparation

  1. Preheat oven to 350°F.

  2. In a large bowl, combine the mashed banana, honey, eggs, vanilla, melted vegan butter, almond milk, shredded apple, and shredded carrots.

  3. Stir in the flour, baking soda, and a sprinkle of sea salt.

  4. Fold in the shredded coconut and chopped walnuts if using.

  5. Bake for 25 minutes.

  6. Tip: Use a food processor to shred the apple and carrots for easier preparation.
