Cashew Butter Sandwich Bread

Ingredients

  • 4 large eggs, separated
  • 1 tablespoons honey
  • 2.5 tsp apple cider vinegar
  • 1/4 cup almond milk
  • 1/4 cup coconut flour
  • 1 tsp baking soda
  • 1/2 tsp sea salt

Preparation

  1. Preheat your oven to 170 C and line the bottom of a loaf pan with parchment paper

  2. Beat the cashew butter with the egg yolks with an electric beater, then add the honey, vinegar, and milk

  3. Beat the egg whites in a separate bowl until soft peaks form

  4. Combine the dry ingredients in another small bowl then add to the egg yolk mixture and beat until combined. The batter will be wet not doughy. Pour in the egg whites, and fold in until just combined. Don’t over mix

  5. Pour the batter into the prepared loaf pan, then immediately put it into the oven

  6. Bake for 45-50 minutes, until the top is golden brown and a toothpick comes out clean
