Peanut Butter Protein Bars
Ingredients
- 2 C rolled wheat free oats
- 1/2 C protein powder
- 3 Tbsp flaxseed meal
- 3/4 C Peanut Butter
- 1/3 C maple syrup
- 2 Tbsp coconut oil
- 1/4 tsp cinnamon
- 1/4 tsp salt
- Handful mini vegan choc chips
Preparation
Line an 8x8 or 9x9 pan with parchment paper, leaving overhang on two sides to use as handles.
Place peanut butter, coconut oil, and syrup in a small bowl, microwave for 30 seconds, and stir well until combined.
Add the mixture to the rest of the ingredients.
Add chocolate chips last so they do not get too warm and begin to melt.
Pat down into the pan.
Refrigerate for at least 2 hours before cutting.
Depending on the protein powder used, the consistency may vary; if it becomes too dry, add a little extra syrup or peanut butter.
