Plant Based Green Goodness Pizza
Ingredients
- 1 cup organic kale
- 1/2 avocado
- 1 tbsp olive oil
- 1/2 lemon
- 1 tbsp pumpkin seeds
- Sea salt
- 1/4 cup filtered water
- Optional: garlic
- simplemills pizza dough
- riced raw cauliflower (optional)
- asparagus
- leeks
- brussels sprouts
- arugula
Preparation
Blend all pesto ingredients together in a food processor; you'll have extras to save for chickpea pasta, as a spread, or dip.
Add riced raw cauliflower into the simplemills pizza dough mix to make it crisp yet slightly chewy and delicious.
Use the kale avocado pesto as sauce on the pizza crust and top with grilled asparagus, leeks, brussels sprouts, and arugula.
