Avocado Pumpkin Seed Hummus

Ingredients

  • 3/4 cup pre-soaked raw pumpkin seeds
  • 1/2 avocado
  • 1/4 cup tahini
  • 2 tbsp olive oil
  • 1 clove garlic
  • 1/2 lemon
  • Sea salt to taste
  • Cumin to taste
  • Cayenne pepper to taste

Preparation

  1. Mince the garlic

  2. Juice the half lemon

  3. In a blender or food processor, combine all ingredients and blend until smooth

  4. Adjust seasoning with sea salt, cumin, and cayenne pepper to taste

  5. Store in an airtight container in the refrigerator; stir before serving to mix any browning
