Coconut Cilantro Lime Rice

Ingredients

  • 2 cups jasmine rice
  • 1 can coconut milk
  • 1 cup water
  • cilantro
  • lime

Preparation

  1. Add 2 cups of white jasmine rice to a medium sized pot, 1 cup water and 1 can of coconut milk

  2. Make sure the coconut milk is clean with no gums and added sugars

  3. Stir it all up and add to stove on high

  4. Let this come to a boil, then add the lid to the pot and lower it to a simmer

  5. Let this sit for 10-15 minutes till all the liquid has absorbed

  6. Get a fork and test it to make sure it’s cooked and it’s nice and fluffy

  7. Chop up some cilantro and add it into the rice and a good squeeze of one lime

  8. Then your finished!
