Kimchi Fried Rice with Eggs and Sesame

Ingredients

  • 2 bags Success Rice Boil-in-Bag White Rice
  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 4 garlic cloves, minced
  • 2 scallions, chopped
  • 1.5 cups kimchi
  • 0.25 cup kimchi juice
  • 2 tablespoons soy sauce
  • 2 teaspoons sesame oil
  • 2 teaspoons furikake
  • 1 teaspoon black pepper
  • 2 teaspoons butter or cooking oil
  • 4 eggs
  • Toasted sesame seeds, for topping

Preparation

  1. Cook the rice according to the package instructions using the boil-in-bag method.

  2. Heat olive oil in a large skillet or wok over medium heat.

  3. Add the chopped yellow onion, minced garlic, and chopped scallions; sauté until softened and fragrant.

  4. Stir in the kimchi and kimchi juice; cook for a few minutes until heated through.

  5. Add the cooked rice, soy sauce, sesame oil, furikake, and black pepper; stir-fry until well combined and heated.

  6. In a separate pan, heat butter or cooking oil and fry the eggs to your desired doneness.

  7. Serve the fried rice topped with the fried eggs, additional chopped scallions if desired, and toasted sesame seeds.
