Vegan Korean Glass Noodle Stir-Fry
Ingredients
- sweet potato noodles
- assorted stir-fry vegetables (such as onions, mushrooms, bell peppers, carrots, spinach)
Sauce
- 3 tablespoons soy sauce
- 2 tablespoons maple syrup
- 1 tablespoon sesame oil
- 1 clove garlic, grated
- 1 tablespoon roasted sesame seeds
- 1/2 teaspoon black pepper
Preparation
Cook the sweet potato noodles according to the package directions.
Prepare the sauce by mixing together all the sauce ingredients.
Stir-fry the vegetables until they are slightly softened.
Add the cooked noodles and sauce to the vegetables, stir-fry until well combined and heated through.
Notes
Any vegetables suitable for stir-frying can be used based on preference.
This dish is quick to prepare and can be ready in about 10 minutes.
