Chicken and Asparagus Salad
Ingredients
- 1 small iceberg lettuce
- 2 small chicken breasts plus gyros seasoning
- 1 bunch green asparagus
- 1 green cucumber
- 200 grams cherry tomatoes
- handful of pumpkin seeds
- olive oil
Sauce
- 100 grams thick Greek yogurt
- 1 tablespoon mayonnaise
- lemon juice to taste
- 1 clove garlic
- Provençal herbs
- salt
- pepper
Preparation
Break off the ends of the asparagus and cut into 3-4 cm pieces.
Cut the chicken into cubes and season with gyros spice, then let it sit for 15-20 minutes.
Fry the chicken in olive oil and, towards the end, add the asparagus and fry together.
Chop the lettuce, cucumber without seeds, and cut the tomatoes in half.
Mix the ingredients in a bowl.
Prepare the sauce by mixing yogurt, mayonnaise, garlic, lemon juice to taste, herbs, and spices.
Drizzle the salad with sauce and sprinkle with pumpkin seeds.
