Mandarin Black Rice Salad
Ingredients
Salad
- 1 cup black rice, cooked and cooled
- 4 cups kale, finely chopped and massaged with lemon juice
- 1.5 Sumo Citrus mandarins, peeled, sectioned, and sliced
- 1/2 cup red cabbage, finely chopped
- 1 red bell pepper, chopped
- 1 cup snow peas, halved
- 1 carrot, grated
- 1 cup shelled edamame
- 1/2 cup roasted cashews
- 2 green onions, chopped
- 1/2 cup cilantro, chopped
- 1/2 cup mint, chopped
Dressing
- 1/2 Sumo Citrus mandarin, peeled
- 1 tablespoon fresh ginger
- 3 tablespoons tahini
- 1/4 cup rice vinegar
- 1 lime, juiced
- 1/4 cup water
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
Preparation
Add all ingredients for the salad to a large bowl and toss to combine. Divide between 4 serving bowls.
Add all ingredients for the dressing to a blender and puree until smooth. Season to taste.
Pour the dressing over the salads right before serving and toss to combine.
