Quinoa and Smoked Salmon Salad

Ingredients

  • 60g quinoa
  • 60g smoked salmon fillet
  • 2 medium grated carrots
  • 3 small cucumbers cut into cubes
  • 7 cherry tomatoes quartered
  • 1 tsp salt
  • 2 tbsp chopped mint or basil
  • 240 ml water or vegetable broth
  • 1/8 tsp olive oil

Sauce

  • 3 tbsp olive oil
  • juice of 1 lemon
  • 1/2 tsp mustard
  • pinch of salt
  • pinch of pepper

Preparation

  1. Cook quinoa with 240 ml water or vegetable broth and 1 tsp salt until tender.

  2. Prepare vegetables by grating carrots, cutting cucumbers into cubes, and quartering cherry tomatoes.

  3. Make the sauce by whisking together 3 tbsp olive oil, juice of 1 lemon, 1/2 tsp mustard, a pinch of salt, and a pinch of pepper.

  4. Combine cooked quinoa, smoked salmon, prepared vegetables, chopped mint or basil, and the sauce in a large bowl. Mix well and serve.
