Quinoa and Smoked Salmon Salad
Ingredients
- 60g quinoa
- 60g smoked salmon fillet
- 2 medium grated carrots
- 3 small cucumbers cut into cubes
- 7 cherry tomatoes quartered
- 1 tsp salt
- 2 tbsp chopped mint or basil
- 240 ml water or vegetable broth
- 1/8 tsp olive oil
Sauce
- 3 tbsp olive oil
- juice of 1 lemon
- 1/2 tsp mustard
- pinch of salt
- pinch of pepper
Preparation
Cook quinoa with 240 ml water or vegetable broth and 1 tsp salt until tender.
Prepare vegetables by grating carrots, cutting cucumbers into cubes, and quartering cherry tomatoes.
Make the sauce by whisking together 3 tbsp olive oil, juice of 1 lemon, 1/2 tsp mustard, a pinch of salt, and a pinch of pepper.
Combine cooked quinoa, smoked salmon, prepared vegetables, chopped mint or basil, and the sauce in a large bowl. Mix well and serve.
