Spicy Green Papaya Salad

Ingredients

  • 1 chili
  • 3 garlic cloves
  • 1 large carrot, shredded
  • 1 stalk lemongrass, bruised and chopped
  • 1 medium green papaya
  • 3 tsp organic tomato paste
  • 1 tsp coconut sugar
  • 2 Tbsp lime juice
  • 2 Tbsp coconut amino sauce
  • Handful of toasted peanuts
  • Mint, Thai basil or coriander (optional)

Preparation

  1. Prepare the green papaya by peeling and shredding it

  2. Toast a handful of peanuts until golden brown

  3. Pound together the chili, garlic, tomato paste, and lemongrass until a rough paste consistency is achieved.

  4. Add the coconut sugar and pound it in as well.

  5. Add the shredded carrot and gently pound it until it becomes a bit tender.

  6. Repeat the same process with half of the shredded papaya.

  7. Stir in the coconut amino sauce, lime juice, and the remaining shredded papaya.

  8. Stir well and add the toasted peanuts, herbs, and a bit of spring onions.
