Crunchy Raw Papaya Salad with Spicy Tofu

Ingredients

  • 1 raw papaya, julienned
  • Handful of bean sprouts
  • About 15 halved cherry tomatoes
  • 10 green beans, chopped and bashed
  • Handful of Thai basil
  • Chopped spring onions
  • 1/2 cup coarsely crushed peanuts
  • 3-4 tablespoons soy sauce
  • 2 tablespoons tamarind extract
  • 1-2 tablespoons lime juice
  • 2 tablespoons peanut oil
  • 3 fresh red chillies, sliced
  • 3 cloves of garlic, chopped
  • Salt to taste
  • Jaggery or palm sugar

Preparation

  1. Julienne the raw papaya and place it in a large bowl.

  2. Add the bean sprouts, halved cherry tomatoes, chopped and bashed green beans, Thai basil, chopped spring onions, and coarsely crushed peanuts to the bowl.

  3. In a separate bowl, make the dressing by combining soy sauce, tamarind extract, lime juice, peanut oil, sliced red chillies, chopped garlic, salt, and jaggery or palm sugar.

  4. Emulsify the dressing using a blender or whisk until well combined.

  5. Pour the dressing over the chilled salad and toss everything together to coat evenly.

  6. Top the salad with additional peanuts for extra crunch.

  7. Serve and enjoy!
