Spinach and Orange Salad with Super Seed Sprinkles
Ingredients
- 2 handfuls organic spinach
- 2 tbsp balsamic or apple cider vinegar
- 1 tbsp extra virgin olive oil
- 1 large navel orange
- 1 tbsp sundried cranberries or raisins
- 1-2 tbsp Super Seed Sprinkles
- Pinch of Himalayan sea salt and pepper (optional)
- Squeeze of lemon juice
Optional additions
- Up to 2 tbsp lightly toasted coconut flakes
Preparation
Tear the spinach into bite-sized pieces
Peel and slice the orange into thin rounds
In a bowl, combine the spinach, orange slices, cranberries or raisins, and seed sprinkles
Drizzle with balsamic or apple cider vinegar, olive oil, and lemon juice
Add a pinch of salt and pepper if desired
Toss all ingredients together to mix well
Serve immediately, optionally topped with toasted coconut flakes
