Spinach and Orange Salad with Super Seed Sprinkles

Ingredients

  • 2 handfuls organic spinach
  • 2 tbsp balsamic or apple cider vinegar
  • 1 tbsp extra virgin olive oil
  • 1 large navel orange
  • 1 tbsp sundried cranberries or raisins
  • 1-2 tbsp Super Seed Sprinkles
  • Pinch of Himalayan sea salt and pepper (optional)
  • Squeeze of lemon juice

Optional additions

  • Up to 2 tbsp lightly toasted coconut flakes

Preparation

  1. Tear the spinach into bite-sized pieces

  2. Peel and slice the orange into thin rounds

  3. In a bowl, combine the spinach, orange slices, cranberries or raisins, and seed sprinkles

  4. Drizzle with balsamic or apple cider vinegar, olive oil, and lemon juice

  5. Add a pinch of salt and pepper if desired

  6. Toss all ingredients together to mix well

  7. Serve immediately, optionally topped with toasted coconut flakes
