Delicious Vegan Coconut Peanut Curry

Ingredients

  • 1 can - coconut milk (not cream)
  • 1/4 cup - smooth peanut butter (unsweetened and natural)
  • 1 tablespoon - tomato paste
  • 1 stick - lemongrass
  • 5 kaffir lime leaves
  • 1 inch piece - ginger (washed but no need to peel)
  • coconut aminos
  • lime juice
  • handful - thai basil (if you can find it)
  • coriander
  • peanuts - chopped
  • spring onions
  • salt and pepper

Preparation

  1. Simply pour your coconut milk, peanut butter and tomato paste into a pan and slowly heat

  2. Bash your lemon grass and ginger (with a rolling pin) and add to your sauce along with your lime leaves

  3. Add 1 tablespoon of coconot aminos, squeeze of lime juice, salt and pepper

  4. Let the aromatics simmer gently in the sauce for 10-15 minutes

  5. If the sauce gets too thick then add a little water or stock

  6. After 15 miutes, scoop out the aromatics and add in your thai basil (if you can find it)

  7. Add in your vegetables and top with chopped peanuts, corainder and spring onions (add some chili if you like it spicy)

  8. Serve over rice, noodles, zoodles and enjoy this bowl of yumminess
