5-Minute Vegan Cheese Sauce

Ingredients

  • 3/4 cup non-dairy milk (oat recommended)
  • 1/4 cup nutritional yeast
  • 1 tablespoon runny tahini
  • 1 1/2 tablespoons apple cider vinegar
  • 1 1/2 teaspoons tomato paste
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon aleppo pepper or crushed red pepper
  • salt to taste
  • 1 tablespoon tapioca flour

Preparation

  1. In a blender, combine all ingredients except tapioca flour and mix on high until combined for 1 minute.

  2. In a non-stick pan, bring the blended mixture to a boil on medium-high heat, stirring occasionally.

  3. In a small bowl, mix tapioca flour with 2 tablespoons of room temperature water to make a slurry until combined.

  4. When the sauce is steadily boiling, lower the heat to medium. Slowly add the slurry while stirring. The sauce will start to thicken and become somewhat stretchy. If too thick, slowly add more milk, 1 tablespoon at a time.

Tips

  1. This cheese sauce can be used for nachos, vegan steak sandwiches, mac and cheese, potatoes, fries, and more.
