Cinnamon Sugar Sweet Potato Fries
Ingredients
- 2 sweet potatoes
- 1 tablespoon melted coconut oil
- 1/4 teaspoon vanilla
- 1 teaspoon cinnamon
- 1 teaspoon coconut sugar
- 1/2 tablespoon unsweetened almond milk
- 1/2 tablespoon maple syrup
- 1/2 tablespoon coconut butter
- Greek yogurt
Preparation
Preheat oven to 425F.
Slice 2 sweet potatoes into fries.
Coat the fries with 1 tablespoon of melted coconut oil.
Top with 1/4 teaspoon vanilla, 1 teaspoon cinnamon, and 1 teaspoon coconut sugar.
Mix everything together with a spatula to ensure each fry is coated.
Bake for 30-35 minutes.
For the icing, mix 1/2 tablespoon unsweetened almond milk, 1/2 tablespoon maple syrup, and 1/2 tablespoon coconut butter.
Melt the icing mixture in the microwave for 15 seconds, stir, and repeat if necessary.
Drizzle the icing over the baked fries.
Serve with Greek yogurt and sprinkle cinnamon on top.
Use dairy-free or vegan yogurt for a plant-based option.
