Apple Pie Bars with Oats and Cinnamon
Ingredients
- 2 eggs
- 2 chopped apples
- 3 cups old fashioned rolled oats
- 1/2 cup applesauce
- 1/2 cup unsweetened almond milk
- 1 tablespoon nut butter of choice
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1/4 cup maple syrup
- 1 teaspoon vanilla
- Optional: 2 tablespoons vanilla protein powder or collagen
Preparation
Preheat oven to 350°F
In a bowl, whisk 2 eggs
Add in the prepared ingredients
Mix all together with a spatula
Line a brownie pan with parchment paper
Pour the mixture into the pan and smooth down with a knife
Bake at 350°F for 30 minutes
Serving ideas
Reheat the bar if using leftovers
Top with peanut butter
Sauté cinnamon apples with coconut oil and cinnamon
Serve with plain yogurt
