Apple Pie Bars with Oats and Cinnamon

Ingredients

  • 2 eggs
  • 2 chopped apples
  • 3 cups old fashioned rolled oats
  • 1/2 cup applesauce
  • 1/2 cup unsweetened almond milk
  • 1 tablespoon nut butter of choice
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla
  • Optional: 2 tablespoons vanilla protein powder or collagen

Preparation

  1. Preheat oven to 350°F

  2. In a bowl, whisk 2 eggs

  3. Add in the prepared ingredients

  4. Mix all together with a spatula

  5. Line a brownie pan with parchment paper

  6. Pour the mixture into the pan and smooth down with a knife

  7. Bake at 350°F for 30 minutes

Serving ideas

  1. Reheat the bar if using leftovers

  2. Top with peanut butter

  3. Sauté cinnamon apples with coconut oil and cinnamon

  4. Serve with plain yogurt
