Paleo Gingerbread Donuts with Coconut Icing

Ingredients

  • 2 eggs
  • 1 cup almond flour
  • 1 tablespoon cashew butter
  • 2 tablespoons maple syrup
  • 1/2 tablespoon coconut sugar
  • 1 teaspoon ginger
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder

Icing

  • 1/4 cup coconut butter
  • 1/4 cup maple syrup

Preparation

  1. Preheat the oven to 325F.

  2. Whisk 2 eggs.

  3. Add 1 cup almond flour, 1 tablespoon cashew butter, 2 tablespoons maple syrup, 1/2 tablespoon coconut sugar, 1 teaspoon ginger, 1 teaspoon cinnamon, 1 teaspoon vanilla, and 1 teaspoon baking powder, then mix well.

  4. Bake for approximately 12 minutes.

Icing

  1. Melt 1/4 cup coconut butter and 1/4 cup maple syrup for 30 seconds.

  2. Make the icing right after preparing the donuts so it has time to harden while the donuts bake.
