Paleo Gingerbread Donuts with Coconut Icing
Ingredients
- 2 eggs
- 1 cup almond flour
- 1 tablespoon cashew butter
- 2 tablespoons maple syrup
- 1/2 tablespoon coconut sugar
- 1 teaspoon ginger
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 1 teaspoon baking powder
Icing
- 1/4 cup coconut butter
- 1/4 cup maple syrup
Preparation
Preheat the oven to 325F.
Whisk 2 eggs.
Add 1 cup almond flour, 1 tablespoon cashew butter, 2 tablespoons maple syrup, 1/2 tablespoon coconut sugar, 1 teaspoon ginger, 1 teaspoon cinnamon, 1 teaspoon vanilla, and 1 teaspoon baking powder, then mix well.
Bake for approximately 12 minutes.
Icing
Melt 1/4 cup coconut butter and 1/4 cup maple syrup for 30 seconds.
Make the icing right after preparing the donuts so it has time to harden while the donuts bake.
